Serves: 4
Ingredients:
600g MSA beef (you can use our casserole cubes or dice up some cube roll or eye of silverside),cut into 25mm cubes
20 ml olive oil
1 brown onion, cut into wedges
100g mild salami, cut into strips
1 red capsicum, cut into thick strips
400g can diced tomatoes
1 cup split green olives
1 teaspoon dried oregano leaves
Method:
1. Heat oil in large non stick pan over high heat. Cook beef in 2-3 batches for 5 -10 minutes until well browned. Remove each batch from pan as cooked and set aside.
2. Add onions and salami to pan and cook for 5 minutes until onions have softened and salami is crisp.
3. Reduce heat to low. Return beef to pan with remaining ingredients. Stir well to loosen any browning in the pan.
4. Simmer, uncovered, for 20- 30 minutes until beef is tender.
